Since then, we have pulled up the vines in some places and replanted them in others to rebalance the age of the vines. We worked extensively on the soil, introducing a mechanical process for aeration and to encourage microorganisms. At the same time, we decided to try a biodynamic process. We have been developing our understanding year on year to get the best results."
